Tasting of starters (to share)

· crispy roll filled (to choose): with vegan mozzarella and sun-dried tomato, Marcona almond and caramelised onion (vegan) or with leek, carrot and goat cheese (vegetarian),
· mini salad of fresh mixed greens, organic cherry tomatoes, and candied papaya with a mustard, agave, and extra virgin olive oil vinaigrette, finished with a hint of toasted yeast,
· dip of the day with vegetable chips,
· 'Mercado Central' of Valencia olives with our house dressing,
· homemade mango and onion chutney, fresh fruit, spiced nuts and breadsticks.
Main dish (to choose)
· Burrata with organic cherry tomato baked with Mediterranean herbs, salted granola of pecan nut, hazelnut, seeds and oats, dried cranberries, basil vinaigrette and date syrup.
· Burrito. Wheat tortilla filled with organic shiitake mushrooms marinated in Japanese sauce, plant-based chicken with chimichurri, red onion, avocado, sun-dried tomato, crunchy whole grains, and sriracha mayonnaise, served with pico de gallo. (Vegan)
· Homemade pasta stuffed with mushrooms and caramelized onion with walnut and thyme pesto and grated vegetable cheese. (Vegan)
· Valencian Titaina. Tomato, peppers, pine nuts, garlic and vegetable tuna accompanied by poached free-range egg served with corn flat bread.
· Free-range egg cooked at low temperature with sautéed mushrooms and vegetables, purple potato and sweet potato parmentier with goat’s cheese, red pepper confit, basil pesto, and Grana Padano DOP cheese, served with a plantain chip.
· Three cooking stages organic aubergine served with rustic tapenade, feta cheese and black olive powder. (Vegan option)
· Amberes burger. Plant-based quarter-pounder-style steak, smoked Scamorza cheese, caramelised onion, semi-dried tomato, breaded aubergine, mixed greens, homemade tartare sauce, served on rustic bread with potato and sweet potato. (Vegan option)
· Portobello mushroom and porcini bourguignon with carrot, leek and shallot, served with plant-based meatballs.
· Plant-based filet mignon with carrot and orange curry soup and mushroom demi-glace, served with sautéed vegetables and mushrooms. (Vegan)

· Trio of homemade bonbons made with belgium chocolate, infused with lime and served with raspberry jam and pistachio powder, pink peppercorn and salt flakes, and a first cold-pressed Picual olive oil jelly and Tajín salt. (Vegan)
· Chocolate mousse on a bitter cocoa sponge base, served with dubai chocolate ice cream and crunchy pistachio, white chocolate and kataifi crumble.
